Lychee nuts are a drupe, meaning a stone fruit with a hard outer shell covering. Popular in South East Asian cuisine and desserts, they can found readily canned. However if you happen upon fresh Lychee nuts, the difference in taste is amazing. Lychee nuts are related to the similar fruits of Longan and Rambutan. The difference being Longan have an even more sweeter and musky taste. These are sensual fruits indeed. 

Lychee Strawberry Gelatin Mold

1 large package (2.8oz) of Pineapple Gelatin
1 can drained Lychee fruit (found in Asian food sections), cut in half
1 pint strawberries hulled and sliced
1 small can pineapple pieces (drained)

Prepare package gelatin according to directions. Place in a mold and allow to set partially. Add the different fruit in sections while the gelatin is slightly thick (midway in the setting stage). Allow to finish setting for 4 hours. To unmold dip into hot water and turn onto a plate/serving dish.
