There really isn’t that much a difference between a peach and nectarine other than the fuzzy skin. Nectarines can be used where one would use peaches for baking. This is a very simple dessert that goes well with a nice scoop of vanilla ice cream. The crumble can be prepared in one large dish or individual portions which is a great way to control portions.

Cherry and Nectarine Brown Sugar Crumble

2 cups cherries pitted
4 nectarines or peaches peeled, pitted and sliced into wedges.
½ cup cornstarch
1/3 cup granulated sugar
1 tsp Almond extract
Brown Sugar crumble
1/3 cup brown sugar
Pinch salt
5 tbsp unsalted butter chilled
1/3 cup flour
Preheat oven to 350 F.

In a bowl mix up cherries, nectarines, cornstarch, sugar, and Almond extract. Set aside.

In a separate bowl, mix brown sugar, salt, butter, and flour. Cut in the chilled butter until you get a crumbly mixture. Butter your ramekins or individual oven proof serving dishes. Add the fruit mixture. Sprinkle the crumb mixture on top.

Place the dishes on a baking dish and bake for about 30 minutes or until thickened bubbly and golden brown.
